We believe dining should be an experience that engages all senses. Our chefs blend modern Australian techniques with the freshest local produce to create dishes that are both familiar and surprising. Every plate is built around what the Gold Coast does best: bright seafood, native botanicals, and produce that arrives at the pavilion with the morning light still on it. The result is a menu that feels generous, precise, and unmistakably Australian.

From Pavilion to Card Lounge

The same attention to detail that goes into our dishes extends to our Card Lounge. Just as a well-crafted meal brings people together, so does a night of face-to-face poker around our physical tables. After dessert, the evening doesn't have to end. Guests move from the dining room into a space where the conversation deepens, the focus sharpens, and the same care we put into every course is reflected in the way we host Texas Hold'em and poker nights.

  • Mooloolaba Prawn Cocktail

    Chilled king prawns with avocado, iceberg lettuce, and a classic cocktail sauce with a hint of lemon myrtle. The prawns are sweet and firm, and the lemon myrtle lifts the sauce without overpowering it.

  • Grilled Moreton Bay Bugs

    Split and grilled with garlic butter, served with a tangy herb salad and charred lemon. The bugs are rich and tender, and the charred lemon adds a smoky, bright edge that brings the whole plate together.

  • Seared Scallops
